Baked Lemon Pudding

  • 2 Tbsp. butter
  • 1 c. sugar
  • 4 Tbsp. flour
  • 1/8 tsp. salt
  • 3 Tbsp. lemon juice
  • Grated rind of 1 lemon
  • 3 eggs
  • 1 1/2 c. milk

Cream butter, sugar and flour together. Add salt, juice and lemon rind, well beaten egg yolks and milk. Fold in stiffly beaten egg whites and pour into buttered baking dish. Set in pan in about one-inch of hot water. Bake at 375 degrees for 45 minutes. Serve warm.
