Avocado Ice Cream

- 2 egg yolks
- 1 pint milk (1 c. evap milk and 1 c water)
- 1 c sugar
- 2 avocados
- 1 tsp vanilla
- 1/2 c macadamia nuts, chopped
Combine first three ingredients, egg yolks, milk and sugar, and cook until slightly thickened. Add vanilla and let cool.
Mash avocados and mix in the nuts. Add this to the cooled mixture and freeze in one ice tray.
