Apricot Delight (Quantity)

  • 2 – #2 1/2 cans apricots (drained well)
  • 1 – #2 1/2 can chunk pineapple (drained well)
  • 4 c. apricot and pineapple juice
  • 3 pkgs. orange Jell-O

Bring juice to a boil and dissolve Jell-O. Set aside to cool. Put apricots and pineapple in large dish 9x13x2-inches. Pour Jell-O over it.

  • 1 c. apricot nectar
  • 1 dash salt
  • 3 Tbsp. cornstarch
  • 1/2 c. sugar
  • 1 egg, well beaten
  • 1 c. whipping cream
  • 1/2 c. coconut

Cook first five ingredients until thickened. Whip 1 cup whipping cream, until stiff. Fold in above mixture and spread over Jell-O after it sets. Sprinkle on coconut.
