14 Karat Cake and Cream Cheese Frosting

  • 2 cup flour
  • 2 tsp. baking powder
  • 1½ tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 cup sugar
  • 1½ cup oil
  • 3 eggs
  • 2 cup grated carrots
  • 8½ oz. can crushed pineapple
  • ½ cup chopped nuts

Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil, eggs. Mix well. Add carrots, drained pineapple and nuts. Turn into 3 greased and floured 9 inch layer pans. Bake at 350 degrees F. for 35-40 minutes or until cake is done.

Cream Cheese Frosting:

Cream ½ cup butter or margarine, 8 oz. pkg. cream cheese and 1 tsp. vanilla. Beat in 1 lb. sifted confectioners sugar. Dilute with milk, if too thick for spreading consistency.
