Sweet Potato Pie
- 3 lg. sweet potatoes
- 3 tbsp. butter
- 1/2 c. hot milk
- 2 eggs, separated
- 1/2 c. sugar
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 2 tbsp. brandy
- pie crust
Boil sweet potatoes until tender. Peel and mash. Melt butter into hot milk and add to pot, beat until soft and creamy. Beat egg whites until stiff; set aside. Add beaten egg yolks, sugar, salt, nutmeg and brandy to potato mixture, mix well. Fold in egg whites. Pour filling into crust. Bake at 350 degrees for 30 minutes.
