San Bai Zuke

  • Daikon
  • Cucumber
  • Carrot
  • Eggplant

Cut in thin slices. Sprinkle salt and let stand 30 minutes.

  • 1 pkg. kiri konbu (rinse in cold water)
  • 1 pkg. dried daikon (wash well and wring water)

Hasu slice thin. Add this during cooking syrup.

Sauce:

  • 1 cup vinegar
  • 1 cup shoyu
  • 2 t. ginger
  • 2 t. sake
  • 2 t. chili pepper

Boil only till dissolved. Cool. Add chili pepper and sake. Add vegetables and other ingredients. Bottle and refrigerate.
