Sunshine Cake
- 7 eggs, separated
Beat egg white until frothy, then add 1 tsp. cream of tartar and beat until stiff.
Melt 1 block butter.
Boil until sticky:
- 1 1/2 c. sugar
- 1/2 c. water
Pour sugar mixture into stiffly beaten egg whites at high speed. Beat well. Then pour melted butter, beaten egg yolks and 1 tsp. vanilla extract in whites. Fold in 1 c. cake flour. Pour into tube pan. Bake 35 – 40 minutes at 350 degrees F. Cool cake by inverting pan. Cool completely before removing cake.
