Fruitcake

  • 1 large jar moist mincemeat
  • 1 pkg. Dromedary dates, chopped
  • 1 pkg. or jar mixed candied fruit
  • 1 1/2 c. chopped pecans, walnuts or macadamia nuts

Sift together:

  • 3 1/4 c. sifted flour
  • 1 c. sugar
  • 1 tsp. salt

Beat together well:

  • 3 eggs
  • 3/4 c. salad oil
  • 2 tsp. vanilla

Dissolve:

  • 1 1/2 tsp. soda
  • 2 Tbsp. boiling water

Mix together fruits and nuts. Add sifted ingredients to the fruit and nuts and mix well. Add beaten eggs mixture and be sure all is combined evenly. Stir in the boiling water and soda mixture. Be sure all is mixed real well before you pour into the pans. Bake 300 degrees F. Line pans.
One 10 inch tube pan – 2 1/2 hours
Two 9 x 5 x 3 pans – 1 1/2 hours
Two 7 inch tube pans – 1 1/2 hours
6 1/2 dozen small cupcakes – 45 minutes
Five 5 x 4 x 2 1/2 freezer tins – 1 hour.
