Papaya Sauce Cake
- 1/2 c. shortening
- 1 1/2 c. sugar
- 2 eggs
- 2 c. diced ripe papaya
- 3 c. enriched flour
- 2 tsp. soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. ginger
- 1/2 tsp. nutmeg
- 2 Tbsp. water
- 1 tsp. lemon juice
- 1 c. raisins
Cream shortening and sugar for 15 minutes; add eggs, one at a time, beating well after each addition. Add papaya and beat well. Sift dry ingredients together and add with water and lemon juice. Fold in raisins. Pour into an oiled and floured 9 x 12 x 2 inch pan. Bake at 325 degrees F. for 45 to 50 minutes.
Yield: 12 servings.
