Rice Soup

  • 1 lg. soup bone
  • 7 c. water
  • 1 clove garlic, mashed
  • 3 sprigs Chinese parsley
  • 1/2 tsp. oregano leaves
  • 1/4 tsp. cumin
  • 1/2 c. chopped ham
  • 1/2 (8-oz.) can tomato sauce
  • 1/2 c. fresh gandules (pigeon peas)
  • Salt, to taste
  • Pepper, to taste
  • 1/2 c. rice

Bring water to a boil. Add soup bone and simmer on low heat until tender. Add garlic, parsley, oregano, cumin, chopped ham, tomato sauce, gandule, salt and pepper. Cook on medium heat for 15 minutes (if more liquid is needed, add chicken broth). Turn heat to low again and add rice. Simmer until rice is soft. Serve piping hot.
