Potato Rolls
- 1 cup mashed potatoes
- 1 cup lukewarm water
- 1 cup sugar
- 1 yeast cake or 1 pkg. yeast
- 1 cup melted butter
- 4 eggs, well beaten
- 6 cups flour (about)
Mix potatoes, water, sugar, and yeast. Let rise in warm place overnight. In morning, add melted butter, eggs and flour enough to make very soft dough. Form into rolls the size of walnuts by rolling dough in hands. Keep hands well buttered to prevent sticking. Place close together in greased shallow pan. Let rise until double and bake at 400 degrees for 12-15 minutes or until done. When baked, spread over top 3 tbsp. of melted butter mixed with 1 tsp. flour. Sprinkle powdered sugar over top.
