Portuguese Style Codfish Gravy

  • 1 Tbsp. vegetable oil
  • 1 clove garlic, minced and crushed
  • 1 large round onion, chopped
  • 2 pkg. Mums brand codfish
  • Pinch of pepper
  • 1 can (No. 303) stewed tomatoes
  • 1/4 cup Portuguese parsley,* coarsely chopped (can substitute American parsley)

Heat oil in pan. Saute garlic and onions. Add codfish, pepper, tomatoes, and parsley. Heat to boil. Pour on rice.
