Pickled Peach

  • 10 lbs. green peaches
  • 3 cups pickling salt

Wash peaches well. Put peaches in a crock. Pour hot water over peaches, covering it. Put weight and leave for 2 days. Drain.

Syrup:

  • 1½ cups raw sugar
  • 1 cup white vinegar
  • 1 tsp. five spice
  • 1 tbsp. red food coloring

Boil and pour over peaches. Next day add 1½ cups sugar and boil with the same syrup and pour over peaches.
