Oatmeal Cake

  • 1 1/2 c. water
  • 1 stick margarine
  • 1 c. quick oats
  • 2 well beaten eggs
  • 1 c. brown sugar
  • 1 c. white sugar
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon

Bring water to boil and add margarine and oats. Stir, turn off heat, cover tightly and let stand. Mix remaining ingredients, add oat mixture and mix thoroughly. Pour into greased 9×13-inch pan. Bake 30 minutes at 350 degrees.

Topping:

  • 6 tsp. margarine
  • 1/4 c. condensed milk
  • 1 1/2 c. brown sugar
  • 1 c. grated coconut
  • 1 c. chopped nuts

Melt margarine in milk; add remaining ingredients and spread on hot cake. Place under broiler until browned (about 5 to 10 minutes).
