Minted Pineapple

  • 1 large pineapple
  • 1 lemon – juice and grated rind
  • 1/2 c. sugar
  • 1/2 c. water
  • 1/4 c. creme de menthe

Peel the pineapple and cut across into thirds. Cut each third in quarters and cut off the core; then cut fruit into 1/2-inch fingers. Put into a flat bowl. Make a syrup of sugar, water, lemon juice and rind. Simmer for 5 minutes and pour over the fruit while hot. Cool. Add creme de menthe and chill very well.
