Mia Ono Hua Ai Hawaii (Fruit Cake)
- 3/4 cup all purpose flour
- ¼ t. baking powder
- ¼ t. baking soda
- 3/4 t. salt
- 3/4 cup sugar
- 1/3 cup coconut, flaked
- 2 cups (10-oz.) whole dates
- 2 cups whole macadamia nuts
- 1 cup (8-oz.) glace natural pineapple pieces
- 3 eggs
- ½ t. brandy flavor or slurp of brandy (let your hand slip)
Combine flour, baking powder and soda, and salt. Stir in sugar. Add dates, nuts, pineapple. Stir to coat with flour mixture. Beat eggs until foamy and light yellow (about 3 min.) Stir eggs and brandy into fruit-flour mixture. Mix well. Pour into greased and lined (wax paper) 9x5x3-inch loaf pan. Bake in 300° oven for 1½ hours. Cool in pan for 10 minutes. Remove from pan and peel off paper and finish cooling on a wire rack.
Makes 1 loaf.
Excellent. Slice thin. Keeps well up to 2 months.
Lasts longer if wrapped in brandy soaked cheesecloth.
