Frosty Salad Loaf

  • 2 3 oz. pkgs. cream cheese
  • 1½ cups pitted, halved fresh or canned Bing cherries, drained
  • 1 1lb. can (2 cups) unpeeled apricot halves, drained
  • 1 cup dairy sour cream
  • ¼ cup sugar
  • ¼ tsp. salt
  • ¼ cup tiny marshmallows (white)
  • Few drops of red food coloring

Let cream cheese stand at room temperature to soften, then beat fluffy. Stir in sour cream, sugar and salt, then fruits and marshmallows. Add a few drops of red food coloring to tint pale pink. Pour into 8½ x 4½ x 2½ inch loaf pan. Freeze 6 hours or overnight (longer the better.) Trim with pitted cherries and peach slices. Serves 8.
