Lemon Cake

Cake:

  • 1 Box Lemon Cake Mix
  • 1 Box Lemon Jello (small box)
  • 1/2 Cup Oil
  • 3/4 Cup Cold Water
  • 4 Ea Large Eggs

Icing:

  • 2 Ea Zested and Juiced Lemons
  • 2 Cups Sifted Powdered Sugar

1. Preheat oven to 350ºF. Grease pan.

2. Beat cake ingredients (except oil) together for 2 minutes. Add oil and beat for another 2 minutes. Pour into pan.

3. Bake for 40-45 minutes.

4. Mix zest, juice, and powdered sugar until smooth.

5. When cake is done, immediately prick the hot cake all over with a fork and pour over ½ of the icing. Pour over the remaining icing 20 minutes later.
