Okinawan Pork Soup
Mrs. Sally Shimabukuro, Bito Doshi Kai
Serves: 6
- 1 pkg. pig’s feet (2)
- ½ chicken, roaster or fryer, cut in pieces
- 2 strips nishime konbu soaked, washed, tied in knots, and cut in pieces
- 2 turnips, diced into one inch pieces
- ½ round onion, chopped
- 1 clove garlic, chopped small
- 2 tsp. Hawaiian salt
- 2 Tbsp. miso
- 1 Tbsp. ginger, grated
Singe pig’s feet directly over stove flame. Wash and simmer. Add onions, salt, ginger, garlic, and simmer 3 hours. Add chicken, konbu, turnips and cook for 30 minutes. Always have enough liquid to cover. Cook for another 30-45 minutes. Add miso just before soup is served.
