Coconut Ice Cream

- 2 grated coconuts
- coconut milk
- About 2 c milk
- 1 1/2 c sugar
- 3 T cornstarch
- 2 1/2 c milk
Measure coconut milk and add enough milk to make 3 1/2 cups in all. Pour this over grated coconut and let stand several hours.
Cook sugar, cornstarch and 2 1/2 c milk until thick.
Squeeze all of the liquid from the coconut and combine with thickened mixture.
Use a mechanical freezer or pour into a tray and freeze. Mix contents occasionally to make a smooth creamy ice cream. Very delicate and delicious.
