Avocado Seafoam Salad
- 1 pkg. lemon gelatin
- 1 c. hot water
- 3 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/2 c. mayonnaise
- 1 c. avocado pulp
- 1/2 c. heavy cream, whipped
- grapefruit sections
- pineapple slices
Dissolve gelatin in hot water. Cool slightly; add lemon juice and salt. Chill until partially thickened. Blend mayonnaise, avocado and whipped cream together and fold into gelatin mixture. Pour into an oiled mold and chill until firm. Unmold and garnish with grapefruit sections and pineapple slices.
Yield: 6 servings.
