Fruit Cake Bars
- 2 cups flour
- 1 cup butter (2 blocks)
- 1/2 cup confectioners sugar
Cut butter into flour and sugar. Press into 9x11x2″ pan. Bake at 350º for 10 minutes or until light brown.
Filling:
- 1/2 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups sugar
- 4 eggs, slightly beaten
- 1 cup candied fruits
- 1 cup chopped walnuts
- 1 cup coconut (optional)
Sift dry ingredients together; add eggs, fold in fruits and nuts. Pour over baked crust and bake for another 30-40 minutes at 350º. Cut into bars while still warm. Sprinkle with confectioners sugar if desired.
