Fried Mochi with Honey

  • 1 (10-oz.) pkg. mochiko*
  • 1/2 tsp. salt
  • 1 cup water
  • 1/4 cup dried Chinese red dates,* seeded and sliced
  • Wesson oil (for frying)
  • 3/4 cup honey
  • 1 tsp. cinnamon

Combine 2 cups mochiko and salt. Add water and mix thoroughly. Flour hands with remaining mochiko and form dough into 1″ balls. Flatten with palm of hand, forming little cakes 2″ in diameter. Press slivers of red dates into dough in a flower design. Fry in a little oil (1/4″) in frying pan for about 1 minute. Turn and cook other side. When done, place in a container with a close-fitting cover. Drizzle warmed honey and sprinkle cinnamon on each cake. Cover container. Let stand for about 1/2 hour. Serve.
