Easy to Make “Chow Chow” Pickles

  • 2 cups cauliflower (one small or medium size head)
  • 2 cups sweet pickled cucumber (12 oz. jar)
  • 2 cups pickle onions (12 oz. jar)
  • 4 tbsp. hot dog relish
  • 1 cup prepared mustard (more if desired)

Wash and parboil cauliflower sections and cool.
Slice onions in half if desired. Cut cucumbers in ½ to 1 inch width slices.
Place first three ingredients in a bowl, add hot dog relish and prepared mustard, mix gently. Put in sterilized jars and refrigerate. Makes about 1¼ quarts of delicious chow chow pickles.
