Chocolate Caramel Cake

Mrs. Iwalani Kamoku – Hualani

  • 2 c brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 c flour
  • 1/3 c butter
  • 3/4 c milk
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt

Mix 2 T of measured sugar and 1 tsp of the measured butter and boil until it thickens slightly. This is the caramel sauce. Cream sugar and butter; add egg yolks and beat; add milk then caramel sauce. Sift baking powder, flour, and salt into batter. Add vanilla, fold in stiffly beaten egg whites. Bake in two greased cake pans at 380° F for 20 minutes.

Icing

  • 2 c confectioner’s sugar
  • 1 1/2 T butter
  • 1 1/2 sq. chocolate, melted
  • 4 to 5 T hot milk

Cream butter add sugar slowly, add chocolate and milk to make right consistency to spread thickly. Spread between layers and on top of cake. Makes 2 nine inch layers.
