Cowboy Cake

- 2 1/2 c. flour
- 2 c. brown sugar
- 1/2 tsp. salt
- 2/3 c. shortening
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. soda
- 1 c. sour milk (or sweet, or buttermilk)
- 2 eggs, well beaten
Measure the flour, sugar, salt and shortening into mixing bowl, and work to fine crumbs. Remove 1/2 cup of mixture and save to sprinkle over top of cake. To remaining crumbs add blended baking powder, spices and soda, mixing thoroughly. Add beaten eggs to the sour milk, then stir into the dry mixture, until smooth. Spread batter in pan and sprinkle with crumbs. More cinnamon and nuts may be added. Bake at 375 degrees for 15 or 20 minutes. Serve hot. Use pan 9x14x2-inches.
