Columbus Fruit Cake

  • 1 Tbsp. Crisco
  • 1 c. water
  • 1 c. sugar
  • 1 lb. raisins
  • 1/2 lb. currants
  • 1/2 Tbsp. salt
  • 3 c. flour
  • 1 tsp. baking soda
  • 5 Tbsp. hot water
  • 1 Tbsp. nutmeg
  • 1 Tbsp. cinnamon
  • 2 lbs. fruit mix
  • 1/2 c. dark molasses
  • Nuts (if desired)

Boil together for 3 minutes the first six ingredients. Remove from heat and let cool. Sift flour, nutmeg and cinnamon together. Dissolve baking soda in the 5 tablespoons hot water. Add alternately to the cooled mixture. Mix thoroughly. Add fruit mix and molasses (and nuts if desired). Bake 1 1/2 hours in a slow oven (325 degrees).
