Chinese Pretzels
- ½ cup cornstarch
- 1½ tbsp. all purpose flour
- ½ tsp. salt
- 1 egg, slightly beaten
- ¼ cup milk
- 1 tbsp. finely minced green onion
- 8 dried shrimps, minced fine
- 1 quart or more of corn oil for frying
Combine cornstarch, flour and salt. Combine egg and milk. Add liquid to dry ingredients and mix thoroughly. Add onion and shrimps.
Heat oil in thermostatically controlled burner set at 350 degrees. Heat pretzel iron and dip into batter absolutely even to top. No batter should go over the top of the iron. Dip back into heated oil.
As soon as batter starts to expand from the iron, gently lift iron up and allow pretzel to drop off. When pretzel is brown on one side, turn to brown the other side evenly. Drain on abosrbent paper. Yield: one dozen or more depending on the size of iron used.
