Pickled Mangoes
- 1/2 gallon green mangoes, peeled and sliced
- 2 c. white sugar
- 1 c. vinegar, distilled
- 4 Tbsp. Hawaiian or rock salt
- 1 pkg. sweet Li Hing Mui
Bring sugar, salt and vinegar to boil. Cool. Add to mango slices. Add Li Hing Mui seeds. Pack in jars and refrigerate.
