Buttermilk Prune Cake
- 2 egg whites
- 1 cup cooked prunes, pitted
- ½ cup sugar
In small bowl beat the egg whites until stiff gradually adding the sugar then the prunes. Set aside for final step.
In a large bowl sift together:
- 2½ cups sifted cake flour
- ¾ cup sugar
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- ¼ tsp. cloves
- ¼ cup chocolate
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
Add to dry ingredients and beat 1 minute:
- 2/3 cup Buttermilk
- 1 tsp. butter flavoring (imitation)
- ¼ cup vegetable oil
Add and beat 1 more minute:
- 1/3 cup Buttermilk
- 2 egg yolks
Fold in the prune whip, pour into two 8 inch square pans and bake in 350 degree oven for 30 to 35 minutes.
