Apple Cake

  • ½ cup salad oil
  • 2 cups sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 4 cups chopped apple
  • 2 cups sifted flour
  • ½ tsp. salt
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 cup chopped nuts, optional

In a large mixer bowl combine oil and sugar and beat well. Add eggs, one at a time beating well. Add vanilla, and apple. Sift dry ingredients together twice; fold into apple mixture. Fold in nuts.

Pour into a greased and wax-papered 9x13x2 inch pan and bake in a preheated oven for about 45 minutes or until done. Set oven at 350 degrees F.

Serve plain with powdered sugar sprinkled on top or with your own favorite icing.
