Gaspacho
This is one of the many versions of the famous Spanish soup. Since it is served cold, it’s ideal on a hot day.
(1 Quart)
- 1 cup California Sauterne or other white dinner wine
- 1 (No. 2) can tomato juice
- 1 cup fresh tomatoes, peeled and diced
- 1/3 cup fresh cucumber, peeled and diced
- 1/3 cup chopped green pepper
- 2 tbsp. finely chopped fresh parsley
- 2 tbsp. fresh lemon juice
- 1 tsp. instant minced onion
- Salt to taste (about 3/4 teaspoon)
- Ice
Chill wine and tomato juice; combine with all the other ingredients except ice. Serve in large soup bowls with a chunk of ice in each bowl.
