Divinity
- 2 1/2 c. sugar
- 1/3 c. white corn syrup
- 1/4 tsp. salt
- 1/3 c. water
- 2 egg whites
- 1 tsp. vanilla
- 2/3 c. chopped nuts
Place sugar, corn syrup, salt and water in a pan and cook until hard ball stage (255). Wipe off any sugar crystals that form on sides of pan. Beat egg whites until stiff. Pour hot syrup slowly over egg whites and beat until candy fluffs up. Add vanilla and continue beating until it loses its gloss. Use wooden spoon if too stiff. Add nuts. Drop candy by teaspoon onto waxed paper. If divinity becomes too stiff, stir in a few drops of hot water. Makes 24 pieces or 1 lb.
