Corn Muffins

  • 1 c. corn meal
  • 1 tbsp. brown sugar
  • 1 tsp. salt
  • 1 1/4 c. milk
  • 1/2 c. chopped raisins
  • 2 tbsp. butter
  • 1 c. flour
  • 4 tsp. baking powder
  • 1 egg

Mix cornmeal, brown sugar and salt together. Scald the milk. Pour over cornmeal. Add butter. Let stand until cool. Sift flour and baking powder and add to mixture. Add 1 egg, well beaten, and chopped raisins. Bake in greased muffin tin for 20-25 minutes in 450 degree oven.
