Seven-Minute Frosting

  • 2 egg whites
  • 1½ cups sugar
  • 1½ teaspoons corn syrup
  • 1/3 cup cold water
  • Dash of salt
  • 1 teaspoon vanilla

Combine all ingredients, except vanilla. Stir thoroughly. Beat at high speed over boiling water (water should not touch top pan) till frosting forms soft peaks. Remove from water. Add vanilla. Beat till cool and frosting forms stiff peaks. Beat in 3 or 4 tablespoons powdered sugar to get an easy spreading frosting that won’t run.
