Coconut Island Cookies

 

Cream together:
1/2 cup butter
1/4 cup brown sugar
1/4 cup white sugar
3 squares chocolate melted in 1/4 cup strong coffee

Combine and add:
1 whole egg, beat well

Sift together:
2 cups flour
1/8 tsp. salt
1/2 tsp. soda

Add to above mixture alternating with 1/2 cup sour milk. Add 1/2 cup freshly grated coconut.
Drop by spoonful on baking sheet.
Bake 375 F for 10 - 12 minutes.

Topping
Melt 2 squares chocolate in 1 tbsp. butter. Add 5 tbsp. sour milk. When chocolate has melted, add powdered sugar until consistency is proper for spreading. Drop spoonsful on each warm cookie as it comes from the oven. Pile fresh coconut on top.
