Pumpkin Ice Cream Pie
- 1 (9″) baked pie shell
- 1 pt. vanilla ice cream
- 1 c. pumpkin
- 3/4 c. sugar
- 1/4 tsp. ginger
- 1/4 tsp. salt
- 1/2 c. chopped nuts
- 1 c. whipped cream
Bake pie shell. Soften ice cream and spread in pie shell. Freeze until ice cream is solid. Combine pumpkin, sugar, spices and salt. Fold in whipped cream. Pour over ice cream. Top with nuts. Freeze.
