Pumpkin Cake

- 1 1/2 c flour (Enriched)
- 3 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 1/2 c milk
- 1/2 c shortening
- 1 c sugar
- 2 eggs
- 1 c pumpkin
- 1 tsp nutmeg
- 1/2 tsp ginger
Sift flour, baking powder, salt, cinnamon, nutmeg and ginger. Cream fat and sugar until light and fluffy. Add eggs and beat well. Combine rest of ingredients. Add alternately with flour, blend well. Bake in two greased 8” layer pans at 350° F for about 45 min. or until done.
