Priceless Chicken Soup

My secretary, Jean Hirano, feels that this chicken soup will cure everything. So she plans to make me healthy by cooking this soup for me and my staff.

  • Salt
  • 1 piece ginger, thumb size, crushed
  • 2 chicken bouillon cubes
  • 1 roasting or frying chicken, cut in quarters
  • 1 small squash
  • 1 package konbu, soaked and knotted
  • 5 shiitake, microwaved in water for 1 minute and cut into quarters
  • Mustard cabbage
  • Long rice, optional

Fill soup kettle half full of water. Add salt to taste, ginger, and bouillon cubes and heat to boiling. Add chicken and simmer for 1 hour. Skim residue.

Add squash, konbu, and shiitake, and simmer another 30 minutes. Add cabbage and long rice, if desired. Simmer until long rice is cooked.
