No Fat Olé Soup
From Kendall D. Sharpless, Unit 9, DOH, Maui
- 1 large can Rosarita nonfat refried beans
- 1 12-ounce tub fresh salsa
- 2 14.5-ounce cans nonfat chicken broth
- 1 14.5-ounce can whole tomatoes, chopped and seeded
- 1 8½-ounce can yellow corn or yellow hominy
- Salt, to taste
- Cumin powder, to taste
- Chili powder, to taste
- Hot pepper, to taste
Mix all ingredients in a large saucepan; heat until flavors blend. Stir occasionally to keep beans from sticking. This soup freezes well.
