No Fat Olé Soup

From Kendall D. Sharpless, Unit 9, DOH, Maui

  • 1 large can Rosarita nonfat refried beans
  • 1 12-ounce tub fresh salsa
  • 2 14.5-ounce cans nonfat chicken broth
  • 1 14.5-ounce can whole tomatoes, chopped and seeded
  • 1 8½-ounce can yellow corn or yellow hominy
  • Salt, to taste
  • Cumin powder, to taste
  • Chili powder, to taste
  • Hot pepper, to taste

Mix all ingredients in a large saucepan; heat until flavors blend. Stir occasionally to keep beans from sticking. This soup freezes well.
