Never-Fail Meringue
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 1/2 cup boiling water
- 3 egg whites
- 7 tablespoons sugar
- Dash of salt
- 1 teaspoon vanilla extract
Blend cornstarch and cold water in a teflon pan; add boiling water. Stir continually and cook until clear and thickened. Let stand until completely cold (quick-cool over ice water). Beat egg whites until foamy; gradually add the sugar and beat until stiff, but not dry. At low speed; add salt and vanilla. Gradually beat in cold cornstarch mixture. Beat at high speed for a few minutes. Spread meringue on filled pie shell. Bake in a 350-degree oven 15 to 20 minutes. This meringue cuts beautifully, never gets sticky, and it does not fall.
