Mango Cake
Mixture 1
- 3 eggs, slightly beaten
- 1 tsp. vanilla
- 1 cup salad oil
- 2 cup cubed mango
- ½ cup coconut
- ½ cup raisins
- ¼ cup walnuts
Mixture 2
- 2 cup flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. baking powder
- ½ tsp. salt
- 1½ cup sugar
Combine the 2 mixture and let stand 20 minutes. Top batter before baking. Bake in 350 degrees F. oven – 45 minutes for large cake pan and 35 minutes for 8 inch square pan.
Topping:
- 2/3 cup corn flakes, crushed
- ¼ cup chopped nuts
- ¼ cup brown sugar
- 2 tbsp. melted butter
