“Lazy” Portuguese Bean Soup

  • 1 Ham bone
  • 1 pkg. hamhock (2 if no Ham bone)
  • 1 medium onion
  • 1 carrot
  • 1 green pepper
  • 1 stalk celery

Cover with water and bring to a boil for 1 hour. Cool. Skim the oil. Add:

  • 3 slices bacon (chopped and fried)
  • 1 portuguese sausage (chopped)
  • 1 medium chopped onion
  • 2 stalks celery (chopped)
  • 1 clover garlic (grated)
  • 2 carrots (diced)
  • ½ cup macaroni
  • cabbage (optional)

Add to stock and cook till vegetable tender. Add:

  • 1 can red kidney beans (drained)
  • 1 can pork and beans
  • salt and pepper to taste

May add watercress before serving.
