Chicken Ono Loa

 

3 or 4 pound chicken
3 tbsp. fat
1 tbsp. finely chopped garlic
1 tbsp. chopped ginger
6 tablespoons vinegar
1 tbsp. soy sauce
2 tsp. salt
1/8 tsp. pepper
Boiling water

Prepare chicken by grooming, drawing, and cutting into pieces. Heat fat in large, heavy skillet and brown chicken. Combine all seasonings and add to chicken. Add enough boiling water so that it may be just seen around chicken. Cover skillet and simmer until the chicken is tender and liquid has cooked away (about 2 hours) Serve hot.
