Guava Oatmeal Cookies

  • 1 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1/2 cup brown sugar
  • 1/4 cup shortening
  • 1 cup rolled oats
  • 1 cup guava pulp
  • 1/3 cup sugar
  • 2 tsp. lemon juice
  • 1/2 cup chopped nuts

Sift together flour, salt, and soda; add brown sugar. Cut in shortening until mixture is consistency of cornmeal. Add rolled oats and press half into oiled 7 by 11 inch pan. Combine guava pulp, sugar, lemon juice, and nuts; spread over crumb mixture. Bake at 350°F. for 40 mins. Cool in the pan. Cut in 1-1/4-inch squares.

Yield: 35 squares.
