Easy Coffee Cake

• 1 stick margarine
• 1 cup sugar
• 1 egg
• 1 egg yolk
• 2 teaspoons baking powder
• Pinch of salt
• 2 cups flour
• 3/4 cup milk
• 1 (or two) teaspoons lemon extract

Cream margarine and sugar. Add eggs. Shift together flour, baking powder and salt. Add alternately with milk. Add lemon extract and bake at 375 degrees for 25 to 30 minutes. Serves 8 to 10. TOPPING: While still warm, pour one stick of melted butter or margarine over cake. Sprinkle with powdered sugar and cinnamon.
