Boston Clam Chowder
- 3 slices bacon, chopped fine
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 1 carrot, diced
- 2 medium potato, diced
In a large pot brown bacon and add vegetables and cook till onions transparent. Add:
- 1 can chicken broth/1 can water
- 2 cans 6-oz. chopped clams
Simmer till just before vegetable done. Add 3 cups milk. Bring to boil and thicken with flour.
- 3 cups milk
- Salt and pepper to taste
- Aji, pinch (optional)
For Manhattan add 1 medium diced tomato.
More water may be added to taste.
