BANANA LOAF CAKE

 

Yield: 9 x 5 x 3 in. pan

INGREDIENTS

2-½ cups flour, sifted

1 tsp. salt

2 tsp. baking powder

1 tsp. baking soda

1-½ cup sugar

½ cup shortening

3 eggs, separated

½ cup milk

1 tsp. vanilla extract

2 tbsp. hot water

1 tsp. lemon juice

1 cup bananas, mashed

½ cup nuts, chopped

METHOD

  1. Sift flour, salt, and baking powder three times.

  2. Cream shortening, sugar and egg yolks.

  3. Add banana and lemon juice.

  4. Blend in dry ingredients alternately with the milk.

  5. Combine hot water with the soda and add to flour mixture.

  6. Sprinkle chopped nuts.

  7. Fold in stiffly beaten egg whites.

  8. Pour into well greased loaf pan.

  9. Bake in 350 degree oven for about 30 min. or until done.
