Hot Milk Sponge Cake

 

1 cup sifted flour (cake)
1 tsp. baking powder
1/4 tsp. salt
3 eggs
1 cup sugar
2 tsp. lemon juice
6 tbsp. hot milk

Sift flour once, measure, add baking powder and salt. Sift 3 times. Beat eggs until very light and thick (5 to 7 minutes). Add sugar gradually, beating well. Add lemon juice. Fold in flour in small amounts. Add milk, mixing quickly but thoroughly until batter is well blended. Bake in ungreased 9" tube pan in moderate oven 350 F. 35 minutes. Cool Inverted pan.
