Upside-Down Cake
1-1/2 cups brown sugar
6 tbsp. butter or margarine
1 #2-l/2 can sliced pineapple, peach or apricot halves, drained or 3 bananas, peeled and sliced 1/4" thick
1/4 cup chopped nutmeats, if desired maraschino cherries
1 recipe of Yellow Cake
Measure butter or margarine into skillet or 9 x 13 inch pan; add brown sugar and mix thoroughly spreading sugar mixture evenly over bottom of pan.
Arrange drained fruit or sliced bananas over sugar mixture. Add nutmeats or cherries, if desired.
Pour cake batter over fruit, spreading with rubber scraper.
Bake in moderate oven 350 F. 40 minutes or until done. Cake is done when a toothpick is pricked in the center of the cake and it comes out clean or when cake springs back after being lightly touched with the finger.
